So, I'm sitting here on the couch under a blanket (heated) since it is cold here.  Winter hasn't even begun yet!  I ran for 2 hours this morning at Lifetime Fitness, then weight training for an hour with Coach B.  Lifetime was running a great special this weekend.  Facial, Mani/Pedi, and Massage for $99!  I missed it the last time it came around and wasn't about to miss it this time!  After all my training my left knee gave out....  I am not happy, with another marathon coming up in January I need to be injury free!!

So my favorite breakfast has been the Paleo Pancake.  I happen to make mine with 3 egg whites, a banana and cinnamon.  I of course top it with Peanut Butter & Co peanut butter.  I go between many of their flavors.  My favorite is the Cinnamon Raisin, then White Chocolate Wonderful.  I love the Maple, Dark Chocolate and Bee Knee's too!  So, I guess I love them all.  I am a peanut butter addict after all.

On that note, I made a recent online purchase from Nikki's Coconut Butter, I am eager to try it and bought the sampler pack, since I have read so much about it from Tina at Carrotsncake.  How could I resist!?

Today was an epic day!  I totally thought that my lingering groin injury was going to be my Achilles heel!  Instead, I found the will and the strength to not only finish the Detroit Marathon, but also qualify for Boston.  My time, 3:36:19, just enough!

I finished school a week ago, so now I have an MBA in finance.  I am also working on getting my baking business going.  Anxiously awaiting Sweet Treats to open in Commerce where I will be selling some of my tasty treats.  Some are vegan, gluten free, and then there are just normal full fat tasty muffins.  I will be posting pictures and working more on this blog as well.

I recently discovered that Earth Balance has an awesome crunchy peanut butter with coconut oil.  I absolutely adore it.  Check out their site for where you can get your jar!!  I use it on everything!  Which lately has been a Paleo pancake (soon to post as well).

Busy, Injured, Busy

I have been busy with training, work, and school.  Now, I have been busy being injured with a groin strain.... and just finished class.  One class left and my MBA is complete and then I will be getting back to this blog.  I am working on starting up Somebody's Heaven - Healthful Treats.  It is just as it sounds, of course completely based around peanut butter!!  Once I have everything set with that I will post pics and info.  In the meantime, I am trying to get healthy since I have a half marathon in a month and a full marathon a month after that.  Finished with school mid-October.

So much to do, so little time!!

Though, according to these two it has been nothing but lazy!!

Today is one week after the marathon.  I didn't do as great as I wanted, but that's okay.  I was shooting for  3:25, instead 3:52, short of Boston.  I am blaming Ann Arbor and far too many hills and not nearly enough hill work.  Already planning for Detroit.  I am sure to hit my mark this time!!  I think I may have to enlist my pacers!!

They for sure can out me on track!

Yesterday, I ran a 10k for the fun of it!!  Still waiting for my official results.  My Garmin said 47 minutes, not bad one week out from a marathon.  It was in Northville, The Solstice Run, was a lot of fun.  Next, I may be doing a half in Lansing, September.... could be perfect to gauge my form for Detroit in October.

I let it happen again, away for too long.... busy, busy, busy with work, school, teaching and training.  I am two weeks out from Ann Arbor's marathon!  I just got an email this week that it is now officially a Boston Qualifier!!  OMG!  Talk about pressure!

I have recently, as of this week, am trying to follow the Thrive Diet.  I can't say it's a diet, it's a way to view food.  What am I doing?  A lot more vegetables than what I have been consuming and I have to say I feel great.  I am staying away from pre-packaged anything.  Going raw, slightly cooked, more vegetarian.  So, there it is, more to come later!

Got up extra early (3:45 am, I actually popped awake then!) on a Sunday morning so I could get my 16 mile run is before D needed to leave for his cycling race at 7:30.  I have to say, if today would have been a race day, it would have been good!

I noticed after my run that my travel mug for my coffee had a leak in it and my coffee was cold.  So, I came home to brew more in our Keurig!  Love the Island Coconut, really I love coconut in general and the smell is heavenly, but not as much as I love peanut butter!  My last post featured Peanut Butter Gu and yes that was taken mid run today too.

Peanut Butter & Company had some new gift packs!  Three peanut butters, two Bob's Red Mill oatmeal packages and this cool breakfast mug.  It comes with a lid and it's own spoon.  Can be microwaved and the dishwasher.

I highly suggest going to their sites and checking it out! Peanut Butter & Co.  If your a peanut butter fanatic, like I am, you will be hooked by the peanut butter.  They have a spicy peanut butter I have yet to try, but it is in my cabinet.

Ok, so it's still a slow go..... but I am going to be committed to at least once a week!  School is taking up the time I could be using.  Honestly, when I get home I have had enough of the computer and being on it all day.  Running is going great, many 20 milers behind me now and anything less than seems like nothing.  Is that even possible?!

I wanted to post some other favorites of mine.

Here are my favorites to run in: Mizuno running shoes, Nike Dry Fit Tank and North Face Running Shorts - I LOVE the Zipper pocket in the back.  If all could have that I would be set!

So my pre-run usually consist of egg whites and a scoop of some fabulous flavored peanut butter from Peanut Butter & Co (Not Pictured).  During my water must be flavored with Nuun Fruit Punch and during Gu!  Can I say that the peanut butter fanatic I am that I cannot get enough of Gu Peanut Butter.  It's perfect!  Larabars in general are just fabulous.  There are a few I cannot have, since they have walnuts, favs of course have chocolate and/or peanut butter.

Beginning in May, the 12th I believe, will begin cycling.  I will at least be going out on group rides on Saturdays, and I cannot wait.  This takes away my one day to sleep in, but will be so worth it!

On a recipe note, I made the best Peanut Butter Gluten Free Low Sugar Mini Cakes.  I will have to post those up next.  Has anyone noticed how difficult it is to keep sugars low!  Half way through my day I am already over the recommended grams.

Oh well, it's a work in progress!  Like most things.

Slow Going....

I think I have become lazy!  How did I find the time to do all I did??  I think there are times when we look back and wonder how we did it.  It's easy, because we had to!  I have scaled back and find that for some reason I want to ramp it up again!

Am I insane?!?

No, not from my point of view.  I love doing what I love doing.  So what does that mean?  I love to teach!  I am looking to add on again!  This time teaching yoga, just plain simple straight forward yoga, no mix, nothing fancy, just yoga.  I am hoping for now at Lifetime.  I have applied and waiting.....

In the meantime it's all about training and running two marathons!  Which has also lead to physical therapy cause a particular glute muscle doesn't want to cooperate, but it will get there.  Onward!

I have also given up gluten, and have felt so much better for it, there are still tweaks that I need to take care of, it's a learning process and I love all the blogs that I have come across that have helped me in this process.

Tomorrow a 14 mile run and lots of peanut butter from my favorite peanut butter company, perfectly named Peanut Butter & Company, still waiting to try the Mighty Maple!

Gluten-Free Mini Chocolate Cakes

As I promised, at least to myself, was that I would post a recipe up this weekend. Check!  This recipe I make on a weekly basis.  It's a great dessert that really can be dressed up in anyway shape or form.

This recipe was adapted from Simply Sugar and Gluten Free  It's a wonderful recipe as is, but I am such a calorie counter and would rather have my calories in frosting!!

Feel free to change around this recipe!  Sometimes I add chocolate chips, adding to a bit of surprise with each bit.  These are very light in chocolate flavor - nothing over powering!


1 1/2 cups Bob's Red Mill Gluten Free Baking Mix
1/2 cup Hershey's Cocoa Powder
1 tsp. baking soda
1/2 tsp baking powder
1/2 tsp salt
2 egg whites or egg replacer
1 tsp espresso powder
1 tsp vanilla extract
1 container fruit baby food - any kind!  Best by my taste; prune, and mixed berries
1 container apple sauce
1/2 cup warm water
1 1/2 cups almond milk original

Mix dry ingredients into a small bowl: 1 1/2 cups baking mix, 1/2 cup cocoa powder, 1 tsp baking soda, 1/2 tsp baking powder, and 1/2 tsp salt.

In a large bowl beat egg whites or egg replacer until thick and frothy, add vanilla and espresso powder, mix until combined.

Next, add the containers of baby food, applesauce, almond milk and water, mix until combined.

Finally gradually incorporate the dry ingredients into this mixture.  This batter should be on the thick side, almost pudding like, if too thick add more almond milk.

To get "mini" cakes, use a "muffin top" pan - there are six places per pan or even a whoopie pie pan would do as well - this is the fun part, since you can do anything with this batter!  This recipe makes 12 in the muffin top pan.  Make sure to grease the pan with cooking spray.  I have tried olive oil and even butter and bottoms came out too dark, spray seems to work the best.

Above is what they look like prior to baking.  Place pans in a 350 degree, pre heated oven for 6 to 7 minutes.  Finished product should come off pans right away and allowed to cool on a rack until completely cooled.

After baking and cooling.  I wrap these individually and place in the freezer.  Leave them on the counter for 30 minutes to thaw or place in the microwave for 20 to 30 minutes then frost!

Decorate as you wish!!  As you can tell from the very first picture that hubby and I like ours a bit different.  His has cream cheese frosting with mint chocolate chips and mine is nothing but plain dark chocolate!

Finding Time

It amazes me now that I have so much more time then what I have how little I get done.  I think I got more done when I was running around like crazy with full time work and teaching 7 classes a week plus school. It truly amazes me what can be accomplished when we have to get it done.

So this weekend, since I am a huge planner!  Posting more on this blog!  There are recipes I want to get added - Gluten Free Chocolate Mini Cakes and tasty Pumpkin Cereal and training's to add, pictures to upload!!  The list goes on!

Of course, one of the most important is to make this blog known!!

One thing to report, I officially signed up for the Detroit Marathon today!!  I am committed now!  I do plan on adding to that I running the Ann Arbor Marathon in June.  So much will be accomplished this year!!  Come October I will also have my MBA in Finance.

A New Adventure

I had been thinking of starting my own blog for a while, so naturally I have been reading a ton of blogs!!  What have I been reading you ask?  Well, fitness (in general), running, gluten-free, vegetarian, vegan, and the list goes on!!  There are some I view daily and others... well not so much.  There were so many things I liked and wanted them all on one blog, Ha!!  It has come close with some, which is why I keep reading them!

What will this blog have?  Many things!  My two dogs; Penny and Stryker, with the occasional visit from Boo Kitty, running, yoga, recipes (mostly baking!) and all my favorite things I come across daily.  I also want to promote my own business, fitness, of course!!

So begins my New Year's resolution!
