Almond Butter! This "pancake" is made only with pumpkin and egg whites. I also cook up 1 egg and an extra egg white on the side, and cannot forget coffee with coconut oil.
The rest of my day was filled with cleaning after the pups frequent messes all over the carpet, laundry, cooking and grocery shopping. I am still paleo, at least 95%. I absolutely love listing to Diane and Liz's podcast over at Balanced Bites. I have learned quite a lot! I also picked up Liz Wolfe's from Cave Girl Eats new book - Skintervention Guide. There is so much information in here, but it all makes perfect sense!! Where was this book years ago?!
As far as the rest of my paleo meals go - lunch was salmon with a mix of vegetables - brussel sprouts, squash, bok chou, carrots, broccoli and topped with guacamole. Super tasty and need to start taking pictures of these! Dinner was pancakes - D's choice, his were gluten free and mine was the same as breakfast but I added blueberries and bacon.
