Blueberry Banana Muffin - Grain, Nut, Egg and Dairy Free!

Blueberry Banana Muffin

Yes - I was searching for a muffin that was egg free first and foremost due to Hashimoto's and the realization I cannot have eggs.  So it also needed to be pale-fied!!  

So, after searching and coming up with nothing I created my own!  Since this doesn't have egg the muffin will sink, but still tasted delish straight from the frig this morning on my way to a run!


The bottom photo is after it settled and came out of the frig.  It would be totally great with coconut butter and slightly warmed!


The recipe!!  Makes 6 muffins!

1 banana - mashed
2 tbs coconut flour
1/3 c arrowroot flour
1 tsp baking soda
1 tsp cider vinegar
cinnamon - as much as you like
1 tsp vanilla extract
1/4 c coconut oil
1/2 (ish) c coconut milk
1 pint blueberries - fresh

Preheat oven to 350.  The easiest way to blend everything evenly is to place in a food processor, minus the blueberries.  You are looking for a muffin batter consistency, so you may need to adjust the amount of coconut milk.  Fold in blueberries.

Distribute into each muffin lined cup and bake for 16 to 22 minutes.

Remember they will come out puffy and then sink when cooled.

More Autoimmune - Darn that Hashimoto's!

The weekend!!! Finally!

This week sure has had it's ups and downs!  I think there were more downs than ups though!

What does this weekend have in store?

Tomorrow, up at 5am - 6 to 8 mile run followed by an hour(ish) in the pool for laps.  Must prepare more for next weekends Tri!  Sunday, up at 4am, to the gym for 6 to 8 miles, then to Kensington to run with the marathon group, probably another 8 miles and then 2 loops of Island Lake.

I'm tired just thinking about that!

Thought I would recap a couple meals this week.  Really they all look the same!  Really they are all for breakfast, except for the pancakes!!  Hmmm..... looks like I am flipping my meals, doesn't it?!  Well Thursday is pancake night at the house.  I posted the fabulous AIP friendly recipe :)  Of course, mine have almond butter on theme.... I really need to cut back on that addicting stuff!  Barney Butter is the best and they have new flavors that I cannot wait to try out!

Tuesday I went to see my endocrinologist for a follow up.  We decided to opt for more test, this time focusing on my pituitary gland and the hormones that coincide.  She also suggested to get DHA, which I got right away and have been taking it 3 times per day.  Hope it makes a difference!

After I treated myself to coffee at Biggby - simple decaf.  I know it's boring, but I am following my modified AIP and they don't have coconut milk and I cannot do any dairy.


Blood draw, nice how they make it look like it was a bigger deal than what it really was.


Plans for the rest of the weekend??  The only thing I got besides side work and grocery shopping is figuring out supplements!

Sunday! Sunday!

This morning started very early!  Try 4am!

First, I have to say I fell asleep on the couch with the puppies pretty early - I was watching the prime time recap of the Tour de France.  Love it!  I woke a few times and then just before my alarm went off at 4:10.

I got dressed and headed to the gym for a 6 mile run, prior to going to Kensington for Marathon Training with the group.  I was filling in for Coach B, so I wasn't sure what my run would be.  That is why I hit the gym, plus it was muggy and I didn't want to be out in it for 13 miles.

The pups of course have to be in every picture!  I was actually taking a picture of my Roadid.  Anytime I am out running (except the gym) I wear mine.  I up graded and got the elite because it's interactive and I can update all my medical information anytime I need to.


My New Balance 890v3 - limited edition - Karmano's Fight for the cure.  They are super light and are the perfect fit.  My newest shoe love.  Going to get another pair of these this week!


I went grocery shopping between yesterday and today and cooked up all the fresh veggies - Yeah we are stocked for the week!  Meal prep super easy!


Of course, last but not least - My swim suit... I am training for 2 triathlons.  The first one is 2 weeks away, it's a sprint in Grass Lake - He Tried She Tried.  So super short, but should be a lot of fun!  The next one is more serious, an Olympic length.  This one is at Island Lake - .9 mile swim (yikes!), 24.8 mile cycle and 6.2 mile run.

More thoughts on AIP.  I am reviewing my supplements this week and thinking about taking a pro/prebiotic.  Looking into Precript Assist based on some readings and podcast (Episode 39) by The Paleo Mom.  I have also been thinking about FODMAP issues, maybe even SIBO.  Still thoughts, but doing more readings as needed.

Red Dog Fitness and Red Dog Studio & Designs.  Well still works in progress, just not enough time in the day for everything I need to cover.  I do have 2 pages dedicated to them and Facebook pages as well.  Check them out, thoughts, suggestions - would love to hear them!

Saturday Happenings and Reflecting on AIP

Saturday, Saturday, ah Saturday!!

It really should be the first time to sleep in, right?!  WRONG!! Bazinga!  As of right now, I am up by 6am and out the door running (literally) by 6:30 am.

Today was to be a busy morning at least and all planned out.  Yeah right!  No one was going by what I had originally set up.

After a quick 6 mile run (I know!) I came home, showered and ate breakfast.  Not to forget the coffee, it was there too!  I had to get Nostrand to the groomer for her first Lion Cut, which is so cute!  I love how she feels!


Now tell me that is a cute kitty!!  She may be one of the original grumpy cats, but she is actually purring!


To continue my tale... the groomer was suppose to open early, she didn't :(  I had to rush back home, wake up D and have him take her back for 9 so I could go to Bloomfield Hills to teach my 9 am class.  I actually made it with a few minutes to spare and then everyone was late!! HA!  It worked out.  Then, about 15 minutes before class ended, as I checked the time.  I noticed I had a voicemail, thought it was the groomer.  Nope!  It was Home Depot delivering my tile that was suppose to be delivered after 1 today... 3 hours early.  Again, I was lucky, D was still home!  Whew!

The rest of the day has been pretty laid back.  Preparing for tomorrow's run.  I am coaching the Life Time Fitness - Commerce Marathon Training program for the morning.  Going to be a nice run.

Reflection!

Having an autoimmune is not fun, did someone say it was suppose to be?!  I think not!  I took out chocolate within the last 2 weeks.  I have been having a lot of digestion issue during my run and thought maybe that was to blame, maybe a little.  I also removed all leafy vegetables - cooked or not, a little better yet.  This mornings run I had no issues!  YES!  Friday at work was a pretty bad day.  Every few weeks I seem to get extreme fatigue.  The funny thing is I went to the gym that morning and swam laps for almost an hour.  It wasn't until I got home that I could barely keep my eye's open.  

I have found a great support group on Facebook that I am learning a great amount from.  You would think that following an AIP would be pretty easy, but what one can eat the other can't and we have similar reactions, but not always to the same foods.

Medications?  No, I am refusing those at this time.  I know, but if they make you feel better then why wouldn't you?  I just don't want to be on it forever.  I would rather figure it out and correct it with food, we shall see how it goes.

Saturday night is just beginning, thinking about where to go for dinner and have a very early 4:30 am wake up!  I am splitting up my runs for tomorrow - half at the gym half at Kensington.  After that, breakfast and a nap! :)  Happy Sunday!

Distractions! Happy 4th of July!

I have been totally distracted the last few weeks!  Of course my mom was here too, which lead to more distractions!


I hope she doesn't mind!! LOL  She just loves her Stryker Doo!!

Work has been so so and trying to work on Red Dog Fitness and Studio/Designs, but there has been so little time!  It's a slow process that I really need to speed up!  I just got my wholesale account with American Apparel (JOY!) for t-shirts and who knows what else at this point.  But the t-shirts will be silk screened with the Red Dog logo!  Very excited it get to that!

Yesterday, my mom went home.  We had a great time yesterday at Rolling Hill Park in Ypsilanti the water park was great and everyone had a great time.  My sister, her 3 kids, my mom and I too.  My back got super burnt!  Ouchie!  I have spent the last week with all of them and it has been great!

My sister was super sweet this week and made me a paleo friendly cupcake!  The recipe is from Elana's Pantry Coconut Cupcake with Key Lime Icing.  Not sure if eggs in the batter is an issue or not, but I also didn't eat the frosting ether.  I have one left and eating it tonight, topped with almond butter.

This morning, ah 4th of July!  No work again (though I have to go in tomorrow - insert frowny face).  D got up early and went for an over 100 mile ride with some friends.  I went to Life Time Fitness - Commerce for Run Club.  We had a small turnout and it was a steamy run!

On the downside I have been having a lot of digestional upset that has been throwing my long runs off tremendously!  I figured chocolate was the issue - so I got rid of that and was better, but now I am not completely sure what is the cause.  Another bad thing is I have to be at Kensington for Marathon training on Sunday morning at 6:30 am.  I am certainly hoping I can get something figured out before then!  (again - insert frowny face here).  It really makes me nervous to think about and of course that only makes it worse!

So, it's all about being calm - I know I can manage that.... I think!

Hope everyone's 4th was great and Friday is a free day from work (except me!)  I am sure I will be tortured and be the one that has to stay the whole day!  Typical!
