Beyond Bacon - Savory Bacon Jam

Savory Bacon Jam.... Do I need to say more?!

This is the first of many recipes that I will be joyfully making out of this beautiful book.  Years ago if you had told me I would have a love for bacon so much that I would purchase a cook book dedicated to it.  Well, I would have told you that was crazy!  Head over to Paleo Parents and check their other paleo recipes out!

I am not giving up the recipe, you will have to go by the book by heading here.  Believe me, it is well worth it!  If not for this recipe, maybe the brownie recipe..... oh so tempting!  I am sure every recipe is just as awesome as this one is!

Here is what the few ingredients look like.

Bacon, cooked and chopped

Onions cooking away

Liquid ingredients and onions incorporated

Bacon added and cooking down about 15 minutes in

After an hour or so

Jam loaded and cooling


Now I have to admit, I sampled at every stage of this 2 hour process and it was so easy!  So absolutely yummy and so filling!  I had dinner during this time too which included more bacon!  It was Brinner after all.... One night a week is pancake night.  I have posted my paleo AIP friendly version here before and D has the normal buttermilk pancakes.

What to eat when trying to be AIP and there is little in the frig!

This morning I got home from the gym and realized that my frig is virtually empty!

The freezer has some frozen veggies and the frig.... need I say more.  Those pancakes are not mine, or that soda on the top.  I grabbed the single container of cooked squash and some frozen veggies (always good in a pinch) and began to assemble breakfast and my lunch for the day.  Trader Joe's has great plain frozen vegetable mixes.  Sometimes they have seasoning packets, but I just toss them out.  Too risky with AIP.  Also, canned salmon, a whole avocado to split between both meals, blueberries.  I love cookies blueberries, they make a great sauce for breakfast with sausages.

The beginning of assembly of lunch.  I always put my protein on the bottom and vegetables of top.  For my lunch I added the canned salmon and then piled the vegetables.  I eat more than D for sure, but I don't think anyone believes me!

Lots of green vegetables cooking up.  I use Trader Joe's Coconut Oil.

The finished product for breakfast.  That is a whole plate full, 1/2 avocado, chicken sausage (2 1/2 links), vegetables galore, plantain flat bread from Purely Twins site.  A must to check out, so many great recipes!

AIP Friendly Turkey Bacon Sandwich

Been craving a sandwich - Here it is!

Tonight I made the best Sandwich ever!!  A turkey patty with bacon and bib lettuce on a plantain flat bread - I use the recipe from Purely Twins!  It is so so good - a definite must try!

I did change it up though!  I used only 3 ingredients - 1 plantain Greenish), 1/2 - 3/4 cup water and coconut oil.  In a food processor I mixed the plantain and water until combined.  I placed 1 tbs of coconut oil in a skillet and heated until melted.  I placed the batter in the skillet and smoothed it out and baked it on 325 for 20 to 25 minutes.  A little portion stuck to the bottom, but very little.

Good Weekend / Bad Eats - How AIP isn't easy on the road

Yes,  I have to admit - I did know about this trip well in advance.  I really didn't think I needed to "over" prepare with extra food.  I thought I would have more than enough choices... but clearly when you fill a big dinner plate like this for each meal - you are never prepared!

I have posted 3 recipes on Pinterest and Facebook for easy AIP recipes, but not good for travel!  Well I think the muffins would have travelled better.... maybe.  So what did I take?  Here is my list:

Coconut Chips
Packages of Nut Butters - mostly Peanut Butter (not Paleo - it's ok - I am not perfect)
Paleo Trail Mix
Coconut Butter and Oil

I thought I would have had a few extra options since the breakfast at the hotel was a "hot" breakfast.  Little did I remember that it meant - eggs (a no no), waffles (a no no), cereals.... so basically a lot of grain/gluten products.  The first morning I had bacon - about 2 pieces and decaf coffee.  I dropped D and his brother off at their race and had a banana and peanut butter.  I went back to our room and got ready to head down town Marquette to a Lake Shore Drive park to go run.  It was beautiful!

I didn't take any additional pictures on the run though.  I did pass where I would later be picking up D and his brother, quite exciting!!  So, since I already had not eaten very well the day before and on top of that think I got a little car sick (8 hours of travel with stops!! UGH!)  I wasn't feeling the best - my digestive system just seemed incredibly irritated.  I kept my run to a quick 6 miles.  The fresh air was exactly what I needed to break my crabbiness! LOL - I do feel sorry for everyone that I came in contact with - I wasn't the most pleasant - and I slept a lot too!

I got back to the hotel to stretch and quickly shower - it was time to drive back downtown and pick the boys up! and boy were they messy!

Everyone was covered in mud - head to toe!  If you didn't already guess we were at Ore to Shore.

We went to lunch, followed by a museum in the downtown a nap and then dinner.  All of which were either under the amount I normally eat or things added that I couldn't and I was tired of sending things back at that point!  Irritating to my already irritated system :(

Sunday morning was an early one!  I couldn't sleep and finally decided to get up at 5:30am to get ready to leave.  Breakfast was sausages (4), a banana, peanut butter (1 tbs.) and decaf coffee.  Not bad, but the sausages where spicy - ugh was not helping!  We stopped in Mackinac for lunch and to pick up fudge for my sister - her request - Chocolate and Rocky Road!

Lunch was at a local restaurant - we hoped for actual lunch but had t settle for breakfast - again not good since it is SO limiting!

We left and headed for home - taking an extra hour due to traffic (as usual).  I finished up the day with grocery shopping and dinner at Red Robin.

Today is 2 days since we came back and I am feeling pretty good today.  I ran 10 miles this morning and had my big breakfast with a banana a ton of vegetables and chicken sausages!  So tasty!!

Why I keep eating foods that are not AIP! They taste good and it's bad!

I haven't posted in a while!  Busy busy and some more busy.

An interview that couldn't work with my schedule, a part time job I am looking forward to starting and all in all just general stress.  The stress is making me feel bloated.  I don't look it, I don't think?!  But I am feeling it for sure.  I haven't changed anything about my eating and my weight hasn't changed.

STRESS - We just don't go together! :(

How do I deal with it?!  You got it!!  Nut butters and chocolate.  I am not talking about super binges here!  I am not sitting down to a whole jar of nut butter with chocolate chips dumped inside, but can you imagine that heaven?!


YYYYUUUUMMMMM!!!!  (drool!!)

What I really do is make a "mug" cake from arrowroot powder, coconut flour and coconut milk and top it with chocolate frosting and chips..... yeah, it's pretty delish for sure!

This weekend we are going out of town for 3 days, yes, in general it' going to be tough being AIP.  I am looking it as an opportunity to break my nightly dessert habit that is just not serving me.  It's always easier when you are out of town, not sure why that is, but it is!

Maybe my face will finally clear up as well!!  Wouldn't that be nice :)  When I was completely AIP my face looked great, and then it went down hill!!  Crap!  What else that helped was my line from Primal Life Organics!  I love the products that Trina has, they work beautifully.  When I get clear again (after not eating those things that I shouldn't) I will take some pics!  My break out areas are my temples and chin and a little on the cheeks.  Not pretty and it makes me self conscious.

Ok - So starting tomorrow (and since I will be gone all freakin day -LOL) I can begin the healing process (again!)  I really need to not stay away so long from posting!  Eek Gads!
